Discovering the Delights of Southeast Asian Cuisine with a Trusted Friend
Speaking of culinary adventures, I’m absolutely thrilled to share a gem that has recently graced my kitchen: an amazing cookbook by my dear friend, Abigail, from Manila Spoon. Her latest masterpiece, aptly titled “Rice. Noodles. Yum.,” is an absolute treasure trove, brimming with authentic and mouthwatering Southeast Asian dishes. Abigail’s passion for her heritage and regional cuisine shines through every page, making this book a must-have for anyone eager to explore the diverse and rich flavors of Asia.
It’s no secret to anyone who knows me that my love for Asian food runs deep. From the aromatic spices of Thai curries to the delicate balance of Vietnamese pho, I’m constantly seeking out new flavors and techniques. So, when Abigail, my long-time online blogging friend, approached me about reviewing a cookbook dedicated entirely to Asian dishes, my answer was an unequivocal “absolutely yes!” I’ve always admired her culinary prowess and the genuine authenticity she brings to her recipes.

Abigail’s recipes are more than just instructions; they are stories, tried and true creations born from a lifetime of experience and exploration. Having been born and raised in the Philippines, her culinary roots are incredibly strong. Beyond that, her extensive travels throughout Southeast Asia have allowed her to gather and perfect an incredible array of regional dishes, all meticulously curated for her cookbook. I often find myself drooling over her stunning food photography on social media, so naturally, I jumped at the opportunity to get my hands on a copy of her new cookbook.
Through her journeys, Abigail discovered that rice and noodles aren’t merely ingredients; they are the quintessential canvas upon which the vibrant sweet, salty, and spicy flavors of Asian cuisine are painted. This profound insight became the central inspiration for all the incredible recipes featured in “Rice. Noodles. Yum.” Her approach is about celebrating these foundational elements and showcasing how they can be transformed into an endless variety of sensational meals. Whether you’re a beginner or an experienced cook, her clear instructions and genuine love for food make the cooking process enjoyable and the results consistently delicious.
Why This Pineapple Shrimp Fried Rice is a Must-Try
Among the many tempting recipes in Abigail’s cookbook, I immediately gravitated towards her Pineapple Shrimp Fried Rice. Knowing how much you all appreciate delicious seafood (a sentiment I wholeheartedly share!) and given my personal affection for meals that perfectly blend sweet and savory elements, this dish felt like the ideal choice to feature. This recipe is a symphony of textures and tastes, each bite offering a unique sensation. The flavor-packed sauce, a true testament to Abigail’s genius, coats every grain of rice and piece of shrimp, creating a harmonious and addictive experience. The addition of curry powder provides just the right amount of subtle kick, reminiscent of the delightful spice profile in my own Red Curry Chicken, adding an extra layer of complexity without overpowering the dish.
This dish also brings back fond memories for me. There was a period when I lived directly across the street from my favorite Thai restaurant. It’s safe to say I was a regular, practically living on their pineapple Thai fried rice and crispy spring rolls several times a week. I was completely addicted! That obsession even led me to create my own version of their Chicken Avocado Spring Rolls. The familiar aroma of ginger, garlic, and curry always transports me back to those days, and Abigail’s Pineapple Shrimp Fried Rice perfectly captures that authentic, comforting flavor I craved. It’s truly a taste of nostalgia, perfected for the home kitchen.
Beyond this incredible fried rice, I’m already eyeing several other recipes from “Rice. Noodles. Yum.” High on my list are her fried sticky rice balls with coconut caramel sauce. If you’re a long-time reader, you know my deep love for Thai sticky rice! I frequently serve it alongside my Thai Peanut Chicken Meatballs, and the thought of frying it and smothering it in a rich, sweet sauce has me absolutely drooling. Abigail’s cookbook is clearly a gateway to endless delicious possibilities, promising many more delightful culinary adventures in my kitchen.
So, whether you’re looking for an easy weeknight meal, a show-stopping dish for guests, or simply a way to indulge your love for Asian flavors, this Pineapple Shrimp Fried Rice recipe is an absolute winner. - 2 tbsp (30 ml) sesame oil
- 12 oz (340 g) shrimp, peeled and deveined, with tails intact
- 4 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp (15 g) curry powder
- 4 cups (645 g) cooked long-grain white rice (jasmine or basmati), cold or chilled (day-old rice works best!)
- 1 cup (150 g) raisins
- 1 cup (200 g) pineapple chunks
- ½ cup (75 g) cashews
- 2 tomatoes, sliced and deseeded
- 2 tbsp (30 ml) fish sauce
- 1 tbsp (15 ml) oyster sauce (or use additional fish sauce if not available)
- ½ tbsp (8 g) sugar
- Salt, to taste
- 3 stalks or about 2 tbsp (12 g) green onions, sliced, for garnish
- Whole pineapple, hollowed out, for serving (optional, a bowl works just as well!)
- In a large wok or skillet, heat the sesame oil over medium-high heat until shimmering.
- Once the oil is hot, add the shrimp and stir-fry for 3 to 4 minutes. Cook until the shrimp are fully opaque and turn a vibrant pink.
- Using a slotted spoon, remove the cooked shrimp from the wok and transfer them to a plate. Set aside.
- Reduce the heat to medium-low. Add the minced garlic and chopped onion to the pan. Sauté for about 1 minute, or until they become fragrant and lightly softened.
- Stir in the curry powder, cooking constantly for another minute until its aromatic fragrance is released.
- Add the cold, cooked rice to the pan and increase the heat back to medium-high. Using a spatula, pat down the rice grains, then fold the rice over. Repeat this process a few times until the rice grains separate easily and are thoroughly coated with the curry powder.
- Incorporate the raisins, pineapple chunks, cashews, and sliced tomatoes into the rice mixture. Mix everything together gently but thoroughly.
- Return half of the previously cooked shrimp to the wok or skillet. Season the entire mixture with fish sauce, oyster sauce (if using, otherwise add more fish sauce), and sugar. Stir well to combine all the flavors.
- Taste the fried rice and adjust the seasoning with salt if needed, ensuring a perfect balance of sweet, savory, and spicy notes.
- Transfer the Pineapple Shrimp Fried Rice to a serving plate or, for an impressive presentation, serve it inside a hollowed-out fresh pineapple. Garnish with the remaining cooked shrimp and freshly sliced green onions before serving immediately. Enjoy this delightful homemade Asian dish!
