The Dough: A Foundation of Flavor

The heart of any great cinnamon roll is its dough. For our carrot cake version, we start with a warm liquid base of milk and water, which is crucial for activating the yeast. Once the yeast is bubbly and fragrant, indicating it’s active, we introduce our premium Finlandia butter, a touch of honey, and maple extract for that signature sweet, earthy aroma. The secret to the carrot cake twist lies in integrating finely grated carrots directly into the dough, along with hints of cinnamon and allspice. This creates a beautifully colored, subtly flavored dough that’s both moist and tender. Kneading, whether by hand or with a stand mixer, develops the gluten, resulting in that wonderfully soft, chewy texture. Allow your dough ample time to rise in a warm environment until it’s doubled in size – this step is non-negotiable for fluffy rolls!

The Spiced Filling: A Burst of Aroma

Once your dough is perfectly risen, punch it down gently and roll it into a large rectangle on a lightly floured surface. This is where the magic of the filling comes in! Brush the surface generously with melted Finlandia butter, then sprinkle a rich mixture of brown sugar, granulated sugar, and a medley of warm spices: cinnamon, allspice, ginger, and nutmeg. Don’t forget to add the remaining finely grated carrots over this spice mixture, ensuring every bite is packed with carrot cake goodness. Rolling the dough tightly length-wise is key to achieving those classic spiral layers. Use a sharp knife or even unflavored dental floss for clean cuts, creating uniform 1-inch thick rolls.

The Second Rise and Baking: Patience Pays Off

Arrange your cut rolls snugly in a baking dish or springform pan. It’s important to allow them a second rise for about 30 minutes. This final proofing helps them puff up and become incredibly light and airy when baked. Before popping them into a preheated oven, brush the tops with a little extra melted butter for a golden, irresistible crust. Bake until they are beautifully golden brown and set. The aroma filling your kitchen at this stage will be nothing short of intoxicating!

The Mascarpone Icing: The Perfect Crown

The crowning glory of these carrot cake cinnamon rolls is undoubtedly the luscious mascarpone icing. While traditional cream cheese frosting is delicious, mascarpone cheese offers a silkier, richer texture and a subtly less tangy flavor that complements the spiced rolls perfectly. Whisk the room-temperature mascarpone until creamy, then gradually add powdered sugar and a touch more maple extract to enhance the overall flavor profile. Slowly incorporate milk until you achieve a smooth, pourable glaze with no lumps. The key is to pour this dreamy icing over the hot, freshly baked cinnamon rolls. The warmth of the rolls will allow the icing to slightly melt and seep into every crevice, creating an unparalleled moistness and flavor experience. Serve them warm, and watch them disappear!

This homemade Carrot Cake Cinnamon Rolls with Mascarpone Icing recipe is absolutely perfect for your Easter brunch or whenever you’re craving the delightful, traditional spices and flavors of carrot cake in a soft, sweet roll!
Ingredients
  • Dough:
  • 1/2 cup milk
  • 1/2 cup water
  • 2 tablespoons salted Finlandia butter, melted
  • 3 teaspoons active dry yeast
  • 1/4 teaspoon granulated sugar
  • 1 tablespoon raw honey
  • 3 1/4 cups all-purpose flour
  • 1 large egg
  • 1 teaspoon maple extract
  • ½ teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 1/4 cups finely grated carrot
  • Filling:
  • 1/3 cup salted Finlandia butter, melted
  • 1 cup packed light brown sugar
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1/4 teaspoon ground nutmeg
  • extra melted butter for brushing
  • Icing:
  • 6 ounces mascarpone cheese, at room temperature
  • 2 cups powdered sugar
  • 2 teaspoons maple extract
  • 5 tablespoons milk
Instructions
Dough:
  1. Heat the milk and water in a small saucepan until just warm (around 105-115°F / 40-46°C).
  2. In the bowl of an electric mixer fitted with a paddle attachment, combine the warm milk/water mixture, melted butter, yeast, granulated sugar, and honey; mix until well combined.
  3. Allow the mixture to sit for approximately 10-15 minutes, or until the yeast becomes delightfully foamy, indicating it’s active.
  4. Add 2 1/2 cups of the all-purpose flour, the large egg, maple extract, cinnamon, and allspice to the yeast mixture. Mix on low speed until just combined. Gently stir in 1/2 cup of the finely grated carrot.
  5. Incorporate another 1/2 cup of flour and mix on low speed until fully integrated.
  6. Switch to the dough hook attachment and knead the dough for about 5-6 minutes on medium-low speed, gradually adding in the remaining 1/4 cup of flour until the dough is smooth and elastic.
  7. Transfer the dough to a lightly greased bowl, turning once to coat. Cover the bowl with a damp towel or plastic wrap. Let it rise in a warm place for 1 1/2 to 2 hours, or until the dough has doubled significantly in size.
  8. Once risen, gently punch down the dough to release the air. Transfer it onto a lightly floured surface.
  9. Using a rolling pin, roll the dough out into a large rectangle, approximately 12 inches long and 6 inches wide.
  10. Use a pastry brush to generously brush the entire surface of the dough with the melted butter for the filling.
Filling:
  1. In a small bowl, combine the brown sugar, granulated sugar, cinnamon, allspice, ginger, and nutmeg. Sprinkle this spice mixture evenly over the buttered dough.
  2. Distribute the remainder of the finely grated carrot evenly over the spice mixture. Carefully and tightly roll the dough up into one long log, ensuring you roll it along the longer side (length-wise) to get more spirals.
  3. Use a sharp knife or unflavored dental floss to cut the roll into 1-inch thick pieces. Place the cut rolls into a baking dish or pan, leaving a little space between each for expansion. Cover and allow them to rise for another 30 minutes before baking. If using a springform pan, as done here, place it on a baking sheet in the oven to catch any potential leaks.
  4. Preheat the oven to 350 degrees F (175 degrees C). After the 30-minute rise, brush the tops of the rolls with any extra melted butter.
  5. Bake for 25 to 30 minutes, or until the tops are golden brown and the rolls are set and cooked through. Immediately remove from the oven and prepare for icing!
Icing:
  1. Place the room-temperature mascarpone cheese in a large bowl and whisk until it is smooth and creamy.
  2. Using a whisk, gradually incorporate the powdered sugar and maple extract until fully combined.
  3. Slowly add in the milk, one tablespoon at a time, stirring continuously until you achieve a smooth, pourable glaze with your preferred consistency and no lumps. Add more milk if the mixture is too thick, or a little more powdered sugar if it’s too thin.
  4. Generously pour the warm mascarpone icing over the hot cinnamon rolls immediately after they come out of the oven. This allows the icing to slightly melt and soak into the rolls for maximum flavor and moisture. Serve warm and enjoy!
