And this year, that long-held dream finally became a vibrant reality. As many of you know, Groundhog Day isn’t just another date on the calendar for me; it’s one of my absolute favorite days, brimming with unique charm and anticipation. To be there, immersed in the electrifying atmosphere of Gobbler’s Knob, witnessing Phil’s grand prediction firsthand, was an experience beyond words. The crisp winter air, the collective cheer of the crowd, the timeless tradition – every moment was magical. Before we embark on the full Groundhog Day recap, let’s rewind just a little further to the start of last weekend, which presented a delightful contrast to the rustic charm of Punxsutawney. I had the pleasure of attending the annual County Executive Ball here in Rochester with Mr. Wishes and several of his esteemed co-workers. This event is always a highlight for me, and I eagerly anticipate it each year. It consistently delivers a fantastic evening filled with lively conversation, wonderful company, and, most importantly, culinary excellence that never disappoints. The Rochester Convention Center undergoes a breathtaking transformation for the ball, adorned with elegant decorations that create a truly stunning ambiance. From the sophisticated lighting to the beautiful floral arrangements, every detail contributes to a luxurious and celebratory mood. However, if I’m being completely honest, while the decor sets the scene beautifully, the food invariably steals the show!

This year’s menu was a complete departure from what they offered last year, presenting an exciting array of new flavors and innovative dishes. It was a delightful challenge to navigate the buffet, sampling the diverse offerings. If I were forced to choose which menu I preferred, I honestly couldn’t; both were exceptional in their own right. This year, however, two dishes stood out and captured my palate entirely: the incredibly rich and savory Truffle Macaroni and Cheese Bake and the exquisitely delicate Tortellini in a Basil Cream Sauce. The truffle mac and cheese was pure indulgence, with its earthy aroma and creamy texture leaving a lasting impression. But the tortellini with its vibrant basil cream sauce was a revelation – fresh, flavorful, and perfectly balanced. I knew immediately, after just a single bite of each, that I simply had to try and recreate these memorable dishes in my own kitchen. The inspiration was potent, and the challenge was accepted!

  • 1 tablespoon olive oil
  • 4 garlic cloves, pressed or minced
  • 1/2 cup diced yellow onion
  • 1 cup sun-dried tomatoes packed in oil, drained well and roughly chopped
  • 1 jar (7 ounces) roasted red peppers, thoroughly drained and chopped
  • 1/2 cup fresh basil, finely chopped (ensure it’s firmly packed for maximum flavor)
  • 5 green onions/scallions, thinly sliced (reserve some for garnish if desired)
  • 1 can (approx. 14 ounces) water-packed artichoke hearts, drained and sliced
  • 1/2 cup shredded Asiago cheese (freshly grated is always best)
  • 1 and 1/2 cup whipping cream (heavy cream for richness, or use half-and-half for a lighter version)
  • 1/2 teaspoon red pepper flakes (adjust to your preferred level of heat)
  • 1 cup reserved pasta water
  • Salt and freshly ground black pepper to taste
