We’ve been making this recipe for countless special occasions over the past year, and it never fails to impress. From casual family gatherings to elegant dinner parties, its simplicity and deliciousness make it an absolute crowd-pleaser. Prepare for compliments, because this skillet cookie comes out beautifully every single time!

Why a Skillet Cookie is the Ultimate Dessert Choice

The concept of baking a cookie in a skillet might seem unconventional to some, but it offers a plethora of advantages that make it an absolute game-changer in the world of desserts:

Unrivaled Ease and Simplicity

One of the biggest draws of this Chocolate Chip Skillet Cookie is its incredible ease. It’s truly a “dump and stir” recipe that minimizes effort and maximizes reward. You don’t need to roll out individual cookies, chill dough, or rotate multiple trays. Everything comes together in one pan, drastically cutting down on prep time and, perhaps more importantly, cleanup time. For busy weeknights or spontaneous dessert cravings, this recipe is a lifesaver.

The Perfect Texture Combination

Baking in a cast iron skillet (or any oven-safe skillet) creates a unique texture profile that’s hard to replicate with traditional cookies. The edges become wonderfully crisp and golden, caramelized against the hot metal, while the center remains incredibly soft, warm, and delightfully gooey. This contrast in textures, coupled with pools of melted chocolate, makes every bite an absolute dream.

Stunning Presentation

Serving dessert straight from a beautiful cast iron skillet is inherently impressive and rustic. There’s no need for elaborate plating; simply bring the warm skillet to the table, perhaps with a scoop of vanilla ice cream melting on top, and watch your guests’ eyes light up. It’s an instant showstopper that feels both comforting and gourmet.

Designed for Sharing

This giant cookie is naturally designed for sharing. It’s a communal dessert experience that encourages everyone to dig in together, creating a cozy and convivial atmosphere. Whether it’s sliced into wedges or scooped directly, it’s a dessert that brings people together.

Crafting Your Perfect Chocolate Chip Skillet Cookie: Tips for Success

While this recipe is incredibly straightforward, a few key tips will ensure your Chocolate Chip Skillet Cookie turns out perfectly every time:

The Magic of Cast Iron

We absolutely love cooking in a cast iron skillet, and this recipe truly shines when prepared in one. Cast iron provides incredibly even heat distribution, which contributes to those perfectly crisp edges and a uniformly baked interior. Plus, a well-seasoned cast iron skillet is naturally non-stick, making serving and cleanup even easier. If you don’t have a cast iron skillet, any other oven-safe skillet of appropriate size will work, but cast iron truly elevates the experience. Make sure your skillet is suitable for oven use up to 350°F (175°C).

Temperature Control is Key

One crucial step is to allow the melted butter and sugar mixture to cool slightly before adding the egg and chocolate chips. If the pan is too hot, you risk scrambling the egg and melting your chocolate chips prematurely, which will affect the final texture and appearance of your cookie. Around 15 minutes is usually enough time for the pan to be warm, but not searing hot.

Don’t Overmix the Dough

As with most cookie recipes, overmixing the flour can lead to a tough cookie. Mix just until the flour is incorporated and the dough is smooth. It might take a minute or two for the ingredients to fully come together, but resist the urge to keep stirring vigorously once everything is combined.

Choosing Your Chocolate

The recipe calls for dark or semi-sweet chocolate, cut into chunks or using chips. Using chocolate chunks, especially from a high-quality bar, will result in glorious pools of molten chocolate throughout the cookie. Semi-sweet chocolate chips are a classic choice and always delicious. Feel free to experiment with milk chocolate for a sweeter profile, or even a blend of different chocolates for added complexity. The Ghirardelli Premium Baking Chips pictured in the original post are an excellent choice for rich flavor.

The Golden Rule: Don’t Overbake!

This is perhaps the most important tip for achieving that desirable gooey center. You want the edges to be golden brown and set, but the center should still look slightly soft and underbaked when you pull it from the oven. The cookie will continue to cook and set as it cools in the hot skillet. For an 8-inch skillet, start checking around 15 minutes; for a doubled recipe in a 12-inch skillet, aim for around 20-25 minutes. Our sweet spot was 22 minutes for the doubled recipe.

Scaling the Recipe

The provided recipe is perfect for an 8-inch skillet, typically serving 4-8 people depending on appetite. However, if you’re feeding a larger crowd or simply want an even more generous cookie, you can easily double the recipe for a 12-inch skillet. We often double it, and it comes out perfectly every time, yielding a magnificent, thicker cookie.

Serving Your Skillet Masterpiece

While a warm Chocolate Chip Skillet Cookie is absolutely divine on its own, it truly reaches its peak when served with complementary toppings. The classic pairing is a generous scoop of cold vanilla bean ice cream, which slowly melts into the warm cookie, creating an irresistible marriage of temperatures and textures. Don’t hesitate to add a drizzle of chocolate sauce, a sprinkle of sea salt to enhance the chocolate flavor, or even a dollop of freshly whipped cream. For an extra touch, some fresh berries like raspberries or strawberries can add a lovely tart contrast.

Remember, since it’s all in one skillet, it only counts as eating ONE cookie, right? That’s our kind of logic! This dessert is perfect for cozy nights in, impressing guests, or simply satisfying that intense cookie craving. It’s comforting, indulgent, and surprisingly sophisticated.

Ingredient Spotlight: Ghirardelli Chocolate Chips

For the absolute best flavor in your Chocolate Chip Skillet Cookie, the quality of your chocolate makes a big difference. We often recommend using premium baking chips or chopped chocolate. The Ghirardelli Premium Baking Chips, particularly the bittersweet variety, are an excellent choice. Their high cocoa content and smooth melt provide a rich, deep chocolate flavor that perfectly balances the sweetness of the cookie dough, creating that irresistible gooey texture we all crave. Of course, feel free to use your favorite brand or type of chocolate, but investing in good quality will always pay off in termsience.

This Chocolate Chip Skillet Cookie recipe baked in a skillet is the fastest and easiest way to make a giant, gooey, warm cookie!
Ingredients

Note: Double these ingredients for a 12-inch skillet to achieve a thicker, more substantial cookie! It comes out perfectly.

  • 1 stick Unsalted Butter (½ cup or 113g)
  • ½ cup Granulated Sugar
  • ½ cup Light Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1 large Egg
  • 1-½ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup dark or Semi-sweet Chocolate, Cut In Chunks OR use semi-sweet or dark chocolate chips (I used the chips pictured above)
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt butter in an 8-inch cast iron skillet (or 12-inch if you’re doubling the recipe) set over medium-low heat (or use another oven-safe skillet). Once melted, remove from heat.
  3. Stir in granulated sugar, light brown sugar, and vanilla extract. Let the mixture rest until the pan is warm to the touch, but no longer very hot, about 15 minutes. This prevents the egg from cooking and the chocolate chips from melting prematurely when mixed in.
  4. Crack the large egg directly into the butter and sugar mixture in the skillet. Use a fork to whisk it thoroughly into the mixture until well combined and smooth.
  5. Carefully add the all-purpose flour, baking soda, and salt directly on top of the wet mixture in the skillet. Gently stir into the mixture using a spatula or spoon until just combined and smooth. It may take a few minutes for the dough to come together, but it will. Avoid overmixing.
  6. Stir in your chosen dark or semi-sweet chocolate chunks or chips until evenly distributed throughout the dough.
  7. Place the skillet directly into the preheated oven for 15-25 minutes, or until the edges are starting to turn golden brown and the top is set, but the center still appears soft and slightly gooey. For an 8-inch skillet, check starting at 15 minutes. If you’ve doubled the recipe for a 12-inch skillet, it typically takes around 20-25 minutes. (Mine was perfectly done right at 22 minutes for a doubled recipe in a 12-inch skillet!).
  8. Remove from the oven and let cool slightly in the skillet before serving warm. This cookie is best enjoyed immediately with a generous scoop of vanilla ice cream on top!
