Expert Tips for Perfect Grinch Fudge

  • The heart sprinkles should adhere on their own thanks to condensation during the chilling process. However, if they don’t stick, use a small dot of melted chocolate to keep them in place. This wasn’t an issue for me, but different climates may influence the outcome.
  • When the sweetened condensed milk mixture is added, the white chocolate may try to seize. This is due to the water-based food coloring. To prevent this, stir the mixture vigorously to prevent seizing and eventually incorporate it into the milk. This can be a bit of a workout for your arm! If seizing continues, you can add a tiny amount of vegetable or canola oil.
  • If you can find neon green oil-based food dye, this will skip the seizing process. However, finding this can be a challenge.
  • Although it is delicious on its own, maple extract does not have to be added as this fudge is a basic vanilla flavor. In case you want to change up the flavor, the maple extract is a scrumptious addition. You can also replace the maple extract with another flavor of extract; the options are endless!
