- 6 medium red potatoes (approximately 1 lb. or 450g)
- 5 large eggs
- 1 medium green bell pepper, finely chopped
- 1 small yellow onion, finely chopped
- 7 oz. (about 1 cup) mayonnaise with olive oil (adjust for desired creaminess)
- 4 oz. (about 1/2 cup) sour cream
- 1/4 cup extra virgin olive oil
- 2-1/2 Tbsp granulated sugar
- 2-1/2 Tbsp sweet pickle relish
- 2 Tbsp white vinegar
- 1/2 tsp salt (or to taste)
- In a large pot, place the whole red potatoes and the eggs. Cover them completely with cold water.
- Bring the water to a rolling boil over medium-high heat. Once boiling, reduce heat slightly and cook until a toothpick can easily pierce the potatoes (approximately 15-20 minutes).
- Carefully drain the hot water and allow the potatoes and eggs to cool down completely, making them easier to handle. You can run them under cold water to speed up the process, but ensure they cool through.
- Once cooled, peel the skins off the potatoes and carefully peel the hard-boiled eggs. Chop both the potatoes and eggs into bite-sized pieces, reserving one egg to slice for garnish later.
- In a very large mixing bowl, combine the chopped potatoes, chopped eggs, chopped green bell pepper, and chopped yellow onion.
- In a separate smaller bowl, whisk together the mayonnaise, sour cream, extra virgin olive oil, sugar, pickle relish, white vinegar, and salt until the dressing is smooth and well combined.
- Pour the dressing over the potato mixture in the large bowl. Gently stir until all the ingredients are thoroughly combined and evenly coated with the creamy dressing, being careful not to mash the potatoes.
