  • ½ cup unsalted butter, divided (for searing)
  • For the Bruschetta Base & Caramelized Shallots:
  • 1 large loaf of artisan bread (such as sourdough, baguette, or asiago loaf), sliced into ½-inch thick pieces
  • 6 medium shallots, thinly sliced (not minced)
  • 4 tablespoons unsalted butter (for shallots)
  • For the Seasonal Thyme Mayo:
  • 1 cup good quality mayonnaise (such as Hellmann’s or Duke’s)
  • ¼ cup fig jam (adds a touch of sweetness and depth)
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves, finely chopped (plus extra for garnish, optional)
Instructions
Preparing the Caramelized Shallots:
  1. In a large skillet, melt 3 tablespoons of butter (or use olive oil for a dairy-free option) over medium heat. Once shimmering, add the thinly sliced shallots and stir to ensure they are fully coated.
  2. Add a generous pinch of salt – this helps to draw out moisture and speeds up the caramelizing process. Cook the shallots, stirring occasionally, allowing them to soften and gradually turn golden brown.
  3. To achieve truly deep caramelization, ensure the pan doesn’t get too hot, as the butter can burn. If the pan becomes too dry or the shallots start to stick, add a tablespoon of water or a splash of broth to deglaze the pan and scrape up any browned bits. Continue this process of cooking and deglazing gently until the shallots have reached a rich, deep amber color and a wonderfully sweet, tender texture. This process can take 15-20 minutes, so be patient – it’s worth it for their amazing natural flavor. Set aside.
Cooking the Beef Tenderloin Roast:
  1. Preheat your oven to 400°F (200°C).
  2. Pat the beef tenderloin roast dry with paper towels. Rub it evenly with olive oil, then generously season all sides with kosher salt and freshly ground black pepper.
  3. In an oven-safe skillet (cast iron works wonderfully), melt the remaining ½ cup of butter over medium-high heat until it begins to sizzle and lightly brown.
  4. Once the pan is very hot, carefully add the seasoned beef tenderloin. You should hear a distinct sizzle upon contact; if not, the pan isn’t hot enough, and the beef might steam rather than sear, resulting in tougher meat.
  5. Sear the roast on all sides, including the ends, until a beautiful, deep brown “crust” forms. Use tongs to carefully flip the roast, ensuring an even sear. This searing step locks in the juices and develops incredible flavor. Add more butter if needed to keep the pan from drying out.
  6. Transfer the skillet with the seared roast to the preheated 400°F oven. Bake for approximately 20-25 minutes for medium-rare (internal temperature of 130-135°F / 54-57°C) or until your desired doneness is reached. Use a meat thermometer for accuracy.
  7. Once cooked, remove the roast from the oven. Tent it loosely with foil to keep it warm and allow it to rest on a cutting board for at least 10 minutes. Resting is crucial as it allows the juices to redistribute throughout the meat, ensuring a tender and flavorful result.
  8. After resting, thinly slice the beef tenderloin against the grain.
Preparing the Seasonal Thyme Mayo:
  1. In a small bowl, combine the mayonnaise, fig jam, kosher salt, black pepper, and fresh thyme leaves.
  2. Whisk all ingredients together until thoroughly combined and smooth. Taste and adjust seasoning if necessary. Set aside.
Toasting the Bread and Assembling the Bruschetta:
  1. In a clean skillet, melt 2 tablespoons of butter over medium heat. Add the sliced bread in a single layer, making sure not to overcrowd the pan.
  2. Pan-fry the bread slices on both sides until they are beautifully golden brown and crisp. You can also lightly toast them in a toaster or under the broiler if preferred.
  3. To assemble: Spread a generous dollop of the seasonal thyme mayo onto each toasted bread slice.
  4. Place one or two thin slices of the perfectly cooked beef tenderloin on top of the mayo, depending on the size of your bread slices.
