The Secret Ingredient: International Delight Coffee Creamers in Baking

For those who know me, it’s no secret that I have an extensive, perhaps even “out of control,” collection of International Delight coffee creamers in my refrigerator. While they are undeniably delicious when swirled into a steaming cup of coffee or tea, my true passion lies in finding creative and innovative ways to incorporate them into my baking. It’s an ingenious hack that elevates ordinary recipes to extraordinary heights, adding unparalleled moisture, richness, and a unique depth of flavor that simply can’t be achieved with plain milk or water. The creamy texture of the creamer contributes to a tender crumb, while its diverse range of flavors offers endless possibilities for experimentation in cakes, cookies, and, of course, cupcakes.

You, my wonderful readers, seem to share this enthusiasm, as my Salted Caramel Kentucky Butter Cake, featuring another fantastic International Delight creamer, has become my most popular recipe this year! This just goes to show how much magic a simple creamer can bring to baked goods. It’s a testament to how these flavorful additions can transform traditional recipes into something truly remarkable and highly craveable.

For these exquisite Vanilla Butterfinger Cupcakes, I chose one of International Delight’s delightful seasonal flavors: Frosted Sugar Cookie. Yes, you heard that right! This creamer tastes exactly as wonderful as you’d imagine—like a freshly baked sugar cookie, sweet and comforting. It’s so incredibly good that I’ve often wondered if it’s socially acceptable to simply drink it straight from the bottle. (Go ahead, I won’t tell anyone if you do!). This stuff truly is amazing, infusing the cupcakes with a subtle, yet distinct, bakery-quality flavor that is absolutely addictive.

My adoration for Butterfingers runs deep; I’ve even crafted a homemade version in the past. So, when developing this cupcake, I knew the frosting had to capture that unmistakable Butterfinger essence. The resulting buttercream is a masterful blend of creamy peanut butter and melted candy corn, creating a flavor profile that is remarkably reminiscent of the beloved candy bar. The candy corn, when melted, provides a subtle sweetness and a unique texture that mimics the crispy, yet chewy, core of a Butterfinger, while the peanut butter delivers that classic nutty flavor. It’s the perfect complement to the vanilla cupcake base, bringing all the elements together in a harmonious, utterly delicious symphony. This frosting is so good, you might find yourself sneaking spoonfuls directly from the bowl!

Crafting the Perfect Vanilla Base with a Creamer Twist

The Frosted Sugar Cookie creamer infused these Vanilla Butterfinger Cupcakes with a profound, rich, and creamy taste that is simply unparalleled. While the cupcakes themselves are inherently vanilla-flavored, the creamer elevates and enhances that vanilla essence in the most delightful way, making each bite incredibly satisfying. It adds a layer of moisture and a subtle sweetness that transforms the texture and flavor, ensuring your cupcakes are never dry or bland. The unique profile of the creamer also contributes to a wonderfully tender crumb, making these cupcakes melt-in-your-mouth delicious.

While I highly recommend trying the Frosted Sugar Cookie creamer for its unique contribution, you can certainly use regular milk or another flavor of International Delight creamer if you prefer. However, I urge you to promise me this: at some point in your baking journey, experiment with coffee creamer in your cupcakes. You’ll be astonished by the results, and everyone who tastes them will undoubtedly inquire about the secret to that wonderfully unique flavor! The richness and nuanced taste that creamer brings to baked goods is truly a game-changer, setting your creations apart from the rest.

International Delight also offers other fantastic seasonal flavors like Peppermint Mocha and White Chocolate Raspberry, both of which I’m already envisioning countless ways to incorporate into my upcoming holiday baking projects. Imagine Peppermint Mocha cupcakes for a festive winter treat, or White Chocolate Raspberry for a lighter, fruitier option. The possibilities are endless, and each flavor promises to bring its own distinct charm to your desserts. Don’t be afraid to experiment and discover your own favorite creamer-infused baked goods!

Achieving Cupcake Perfection: Tips for Success

These Vanilla Butterfinger Cupcakes strike a flawless balance between sweetness and an exquisitely fluffy texture. They are guaranteed to provide a memorable and sweet ending to any festive gathering or casual indulgence. To ensure your cupcakes reach their full potential and turn out perfectly every time, here are a few invaluable tips and tricks:

  • Beat Those Eggs for Fluffiness: Don’t underestimate the power of properly beaten eggs. Beat them until they are extra light and foamy. This crucial step incorporates a significant amount of air into your batter, which is fundamental for achieving that signature soft, airy, and fluffy texture in your finished cupcakes.
  • Embrace Room Temperature Ingredients: Ensure your eggs, butter, and creamer (or milk) are all at room temperature before you begin mixing. This allows them to emulsify properly, creating a smoother, more uniform batter. A well-emulsified batter translates to a finer crumb and a more consistent texture in the baked cupcakes.
  • The Golden Rule: Don’t Overmix: Once you add the dry ingredients to the wet, mix just until they are combined and no streaks of flour remain. Overmixing is the enemy of tender cupcakes; it develops the gluten in the flour excessively, leading to dense, tough, and chewy cupcakes instead of the desired light and airy ones.
  • Ensure Even Baking: To promote even cooking and browning across all your cupcakes, make sure to rotate your cupcake tins halfway through the baking time. This compensates for any hot spots in your oven, preventing some cupcakes from being overdone while others are still underbaked.
  • Cool Completely Before Frosting: Patience is a virtue, especially when it comes to frosting. Allow your cupcakes to cool completely on a wire rack before you even think about applying the buttercream. Frosting warm cupcakes will cause the delicate buttercream to melt, slide off, and create a sticky, unappealing mess. A completely cool cupcake is key for a beautifully frosted result.
  • Storage Secrets: For optimal freshness and to maintain the integrity of the chocolate shell (if using), store these cupcakes in an airtight container in the refrigerator. Bring them to room temperature for about 15-20 minutes before serving for the best texture and flavor.

Serves: 2 dozen
These ultimate soft and fluffy Vanilla Butterfinger Cupcakes are loaded with flavor, featuring a vanilla cake base, a peanut butter and candy corn buttercream, and a crunchy Butterfinger topping. They are the perfect dessert for any candy and peanut butter enthusiast!

Ingredients

  • For the Cupcakes:
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 large eggs, at room temperature
  • 1 and 1/3 cup sugar
  • 3 sticks (6 ounces) unsalted butter, melted, and brought back to room temperature
  • 4 teaspoons pure vanilla extract
  • 1 cup International Delight Frosted Sugar Cookie Creamer (or use milk)
  • For the Peanut Butter & Candy Corn Buttercream Frosting:
  • 1/2 cup milk
  • 1 and 1/2 cups candy corn
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1/2 cup creamy peanut butter
  • 3 – 4 cups powdered sugar
  • For the Chocolate Shell (Optional. Alternatively, skip this step & just sprinkle crushed Butterfingers on top of frosting):
  • 2 cups chocolate chips
  • 3 tbsp vegetable oil
  • Crushed Butterfingers (for topping)

Instructions

Cupcakes:
  1. Preheat your oven to 350°F (175°C). Line 2 standard 12-cup muffin tins with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, or using an electric hand mixer, beat the eggs and sugar together on medium-high speed until the mixture is light, pale, and foamy, approximately 2 minutes.
  4. While continuing to beat, gradually pour in the melted butter (which should have cooled to room temperature) and then the pure vanilla extract. Mix until just combined.
  5. With the mixer on low speed, slowly add half of the dry ingredients to the wet mixture. Mix until just incorporated.
  6. Pour in all of the International Delight Frosted Sugar Cookie Creamer (or milk), mixing until combined. Follow immediately with the remaining dry ingredients. Mix only until the last streaks of flour disappear. Be careful not to overmix the batter, as this can result in dense and tough cupcakes.
  7. Divide the batter evenly among the prepared cupcake tins, filling each liner about two-thirds full.
  8. Bake for 18-20 minutes, or until a wooden skewer or toothpick inserted into the center of a cupcake comes out clean. Rotate the tins about halfway through baking to ensure even cooking. Keep an eye on them starting at 18 minutes, as oven temperatures can vary.
  9. Allow the cupcakes to cool in the tins on a wire rack for 10 minutes before carefully removing them. Transfer the cupcakes directly to the wire rack to cool completely before frosting. This is crucial for preventing melted frosting.
Peanut Butter & Candy Corn Buttercream Frosting:
  1. In a small saucepan, combine the milk and candy corn over low heat. Gently melt the candy corn, stirring occasionally, until it is completely dissolved and the mixture is thick enough to coat the back of a spoon. Remove from heat and let it cool completely to room temperature. This step is important for the frosting’s consistency.
  2. In a large bowl, using a mixer, cream together the softened unsalted butter and creamy peanut butter until light and fluffy.
  3. Gradually add 2 to 3 cups of powdered sugar, beating until smooth. Start with 2 cups and add more incrementally until you achieve a good consistency.
  4. Slowly incorporate the cooled candy corn mixture into the buttercream, mixing until the desired consistency is achieved. (You may not need to use all of the candy corn mixture; I typically use about 3/4 of it). If the frosting is too thin, add more powdered sugar, one tablespoon at a time, until it reaches your preferred thickness for piping or spreading.
  5. Tip: If you desire a generous amount of frosting on each of your 24 cupcakes, consider doubling this buttercream recipe to ensure you have plenty.
  6. Once the cupcakes have been frosted, for best results before dipping in chocolate (if using), place them in the freezer for about one hour to firm up the frosting. This makes the dipping process much cleaner.
Chocolate Shell (Optional. Alternatively, skip this step & just sprinkle crushed Butterfingers on top of frosting):
  1. In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is fully melted and smooth. Let the melted chocolate cool for a few minutes before dipping to prevent it from melting your frosting.
  2. Dip the firm, frosted cupcakes upside down into the cooled chocolate mixture. (I often just dip half of the frosted top for a stylish look, but feel free to coat the entire top if you wish). Spin the cupcake gently to ensure the frosting is completely covered. Lift the cupcake, allowing any excess chocolate to drip off.
  3. Immediately, before the chocolate sets, sprinkle a generous amount of crushed Butterfingers on top of the chocolate shell. The chocolate will harden quickly, holding the candy in place.
  4. Due to the chocolate shell, the cupcakes can get a bit “melty” if left out at room temperature for an extended period. For optimal enjoyment and presentation, keep the finished cupcakes stored in the refrigerator until you are ready to serve them. Enjoy your incredibly delicious Vanilla Butterfinger Cupcakes!
