These Mini Sausage, Spinach and Jarlsberg Cheese Frittatas are a fun change-of-pace breakfast recipe or on-the-go snack idea packed full of protein!
Ingredients
  • 1 lb breakfast sausage
  • 1/4 cup finely diced onion
  • 3/4 cup fresh baby spinach
  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup shredded Jarlsberg Swiss cheese
  • 6 small slices Jarlsberg swiss cheese
  • salt & pepper, to taste
  • cooking spray
Instructions
  1. Preheat oven to 350°F (175°C). Ensure your oven rack is in the middle position for even baking.
  2. In a large skillet, brown the breakfast sausage over medium-high heat, breaking it up with a spoon, until it is fully cooked through and no longer pink.
  3. Using a slotted spoon, remove the cooked sausage and transfer it to a paper towel-lined plate to absorb any excess grease. Leave a small amount of rendered grease in the pan; if there isn’t enough, add a tablespoon of olive oil.
  4. Add the finely diced onion and fresh baby spinach to the same skillet. Cook over medium heat, stirring occasionally, until the onion is soft and translucent and the spinach has wilted completely. Season generously with salt and freshly ground pepper, to taste.
  5. In a medium mixing bowl, beat the 6 large eggs and 1/4 cup of heavy cream together vigorously until well combined and slightly frothy.
  6. Gently stir in the cooked sausage, the softened onion and spinach mixture, and the 1/4 cup of shredded Jarlsberg cheese. Adjust seasoning with additional salt and pepper, to taste, ensuring flavors are well balanced.
  7. Lightly butter or generously grease a standard 12-cup muffin tin, or use a non-stick cooking spray for easy removal.
  8. Carefully spoon approximately 1/4 cup of the egg and sausage mixture into each prepared muffin cup, filling them about two-thirds full to allow for expansion.
  9. Cut each of the 6 small slices of Jarlsberg Swiss cheese in half, creating 12 small squares. Place one half-slice of cheese on top of each filled muffin cup for an extra layer of cheesy goodness and visual appeal.
  10. Bake in the preheated oven for about 20-25 minutes, or until the cheese is beautifully bubbly and melted, the frittatas are set firm in the middle, and their tops are lightly golden brown. Baking time may vary slightly depending on your oven.
  11. Remove the frittatas from the oven and allow them to cool in the muffin tin for about 5 minutes. This cooling period helps them firm up and makes them easier to remove without breaking.
  12. Carefully remove the frittatas from the muffin tins (a small knife or offset spatula can help if needed) and serve warm. These delicious, protein-packed breakfast bites are wonderful for meal prep and can be stored in an airtight container in the refrigerator for up to 3-4 days. Enjoy!
