A significant addition to our new space is a proper computer desk for our office/den. After weeks of hunching over a flimsy card table, my back, and indeed my productivity, will immensely appreciate this upgrade. Those temporary chairs were certainly not designed for extended work sessions; comfort was, shall we say, a luxury they decidedly lacked. Now, with a dedicated workspace, I’m looking forward to more comfortable and efficient blogging, creating content, and connecting with all of you.

Weekend Chronicles: Hosting, Treats, and Melodies

This past weekend was a delightful blend of home comforts and cherished experiences. Friday night was dedicated to celebrating our new chapter with friends, who joined us to see the house for the first time. There’s a unique joy in finally having a spacious, comfortable place to entertain, where everyone can relax and spread out. After 6.5 years of apartment living, this newfound freedom feels like a dream – almost like living in a mansion! Simple pleasures, like inviting friends over for an evening of good company and laughter, were often challenging in our previous space. I absolutely love this new capability. For the occasion, I whipped up a couple of crowd-pleasing desserts: my much-loved Pumpkin Butterscotch Cookies and a batch of homemade chocolate chip biscotti (keep an eye out for that recipe coming soon!). Sunday night brought another special treat: a Chris Tomlin concert right here in Rochester. These tickets were a birthday gift for Mr. Wishes way back in August, and he was finally able to “cash in” on his present. It was an absolutely incredible concert! Chris Tomlin has a remarkable ability to connect with his audience through his powerful worship music, and he never fails to deliver an inspiring and uplifting experience. The energy in the venue was palpable, and hearing thousands of voices sing along to profound lyrics was truly moving. We’ve been fortunate enough to see him perform several times over the years, and each concert is a unique and unforgettable spiritual experience.

  • 1 can (10.5 oz) cream of mushroom soup (condensed)
  • 1 medium onion, finely chopped (adds essential aromatic depth)
  • 1 package (8 oz) fresh mushrooms, sliced (optional, but highly recommended for earthy flavor and texture)
  • 1 box (6 oz) Long Grain and Wild Rice with Seasonings (I consistently use and recommend Uncle Ben’s for its consistent quality and flavor profile)

DIRECTIONS:

  1. Prepare the Slow Cooker: Place the chicken breasts evenly in the bottom of your slow cooker. For best results, ensure they are in a single layer if possible, or at least not overly crowded.
  2. Layer the Aromatics: Sprinkle the chopped onion and sliced fresh mushrooms (if using) directly over the chicken. These ingredients will release their flavors as they cook, infusing the chicken.
  3. Add the Creaminess: Spoon the entire can of cream of mushroom soup over the onion and mushrooms. Gently spread it out to cover as much of the ingredients as possible. No need to dilute the soup; it will thin out as it cooks.
  4. Slow Cook to Perfection: Cover your slow cooker with its lid. Cook on the LOW setting for 6-7 hours. *Important Note:* Every slow cooker is different. Mine, for instance, tends to cook quite hot, so it might be done in as little as 5 hours. It’s crucial to get to know your appliance. Over time and with experience, you’ll learn whether to slightly decrease or increase the recommended cooking times for optimal tenderness without drying out the chicken. The chicken should be incredibly tender and easily shredded with a fork.
  5. Prepare the Rice: About 30-40 minutes before serving, cook the Long Grain and Wild Rice according to the package directions. Ensure it’s fully cooked and fluffy.
  6. Combine and Serve: Once the chicken is cooked through and the rice is ready, stir the cooked rice directly into the slow cooker with the chicken mixture. Stir gently until everything is well combined and heated through. Serve hot and enjoy this wonderfully comforting meal!
